Peanut-Butter Cookie Dough Bites


1 can (drained/rinsed) garbanzo beans/chick peas
¾ cup oats
6 tablespoons peanut butter
2tsp vanilla
2 egg whites
3tbsp Sweetener of choice
1/2tbsp baking powder
1/4tsp baking soda
*25g dark chocolate chips

1Blend everything together except chocolate chips

2Spoon the batter into a greased mini-muffin baking pan

3Put chocolate chip(s) in each of the mini-muffin batters

4Cook @ 350° for 9-12 minutes

5Take out, let cool and enjoy! *my mini-muffin tin fit 24 muffins, and I had batter left over (about 3 mini-muffins worth), you can eat the batter as is, or like I did, put the remaining batter and chocolate chips in a greased mug and microwave for 1 minute)

Recipe makes about 27 mini bites) *53.8 calories* - 2.6g fat (.6 saturated) - 5.5g carb (1.2g fiber 1g sugar) - 2.8g protein
